Thanksgiving is coming and one thing I am always thankful for this time of year is my mother’s fantastic cranberry bread! It tastes sooooo good, and cranberries have numerous health benefits!
In the spirit of the season, I’ve decided to share this magical recipe with you. I hope you like it as much as I do. Let me know how it turns out!
Fantastic Cranberry Bread
Ingredients
3 cups flour
2 cups sugar
1 tsp salt optional
2 tsp baking powder
1/2 tsp baking soda
3/4 cup orange juice
2 tbsp boiling water
3 tbsp melted butter
3 beaten eggs
1/2 pound or more cranberries, most chopped, some whole
Directions
Preheat over to 350. Sift dry ingredients. Separately mix butter and eggs and add other liquids. Stir wet ingredients into dry until moist. Fold cranberries into batter. Pour into greased pan. Bake at 350 degrees for 1 hour. Stick comes out clean when cranberry bread is done.
Keep the bread moist with a pan of water at a lower rack in the oven.
